Asian Chicken and Slaw Salad

Ingredients

  • 2 Tbs. rice vinegar
  • 2 Tbs. olive oil
  • 1 Tbs. lime juice
  • ½ tsp. sea salt
  • ¼ tsp. black pepper
  • 2 minced garlic cloves
  • 1 tsp. fresh grated ginger
  • 5 cups shredded, cooked skinless chicken breast
  • 1 cup shredded carrots
  • 1 green bell pepper thinly sliced
  • 2 green onions thinly slice on a diagonal

Directions:

1.    Whisk together vinegar, olive oil, lime juice, salt, pepper, garlic, and ginger.
2.    Toss the remaining ingredients together and add the dressing and toss again.
