Creamy Butternut Squash Soup

Ingredients:

  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 carrot chopped
  • 3 garlic cloves minced
  • 4 cups cooked butternut squash
  • 1 cup diced potatoes
  • 1 quart chicken stock

Directions:

  1. Add all ingredients except butternut squash.
  2. Boil 15 minutes or until potatoes are soft.
  3. Add butternut squash and boil on low heat for an additional 15 minutes.
  4. Blend in batches until smooth.

Serve!
