Ingredients:
- 1 cup chopped onions
- 1 cup chopped celery
- 1 carrot chopped
- 3 garlic cloves minced
- 4 cups cooked butternut squash
- 1 cup diced potatoes
- 1 quart chicken stock
Directions:
- Add all ingredients except butternut squash.
- Boil 15 minutes or until potatoes are soft.
- Add butternut squash and boil on low heat for an additional 15 minutes.
- Blend in batches until smooth.
Serve!
