Warm Seasonal Roasted Brussel Sprout Salad

 

Ingredients

  • 2 pounds Brussels sprouts sliced ¼ inch thick
  • 4 Tbs. olive oil divided
  • 3 cloves of garlic minced
  • 1 small red onion
  • 4 Tbsp. lemon juice
  • ½ tsp. salt
  • ¼ tsp. pepper
Directions:

1.    Preheat oven to 375 degrees.
2.    Toss 2 Tbs. olive oil, salt, and pepper with the Brussels sprouts. Place evenly on baking tray.
3.    Bake approximately 20-25 minutes until slightly browned.
4.    Remove from oven and place in a large bowl.
5.    Toss remaining ingredients together and toss with Brussels sprouts.
