Now that you have a plan to grow your own nutritious and delicious leafy greens, it’s time to dress them up! As promised, I am sharing my famous Dill Yogurt Dressing recipe. This dressing is great on any type of salad or can be used as a marinade. Organically delicious!
Dill Yogurt Dressing
Ingredients
1 cup organic Greek yogurt
2 tablespoons fresh lemon juice
2 tablespoons organic mayonnaise
1 tablespoon fresh chopped dill
1 minced clove of garlic
1 tsp. apple cider vinegar
½ tsp. salt
Directions
Place all ingredients in a blender. Blend until it expands to about one inch higher than the starting ingredients amount. The dressing will expand as it aerates. This makes it have a fluffy consistency that is great for pouring.
Caesar Herb Salad
Ingredients
6 cloves of organic garlic
3/4 cup of organic mayonnaise
5 anchovy fillets
6 tablespoons of grated Parmesan cheese, divided
1 teaspoon of Worcestershire sauce
1 teaspoon of Dijon mustard
1 tablespoon of freshly squeezed organic lemon juice (or more to your taste)
salt (to your taste)
ground black pepper (to your taste)
1 tablespoon fresh chopped parsley
1 tablespoon fresh chopped basil
1/4 cup of organic olive oil
1 head of romaine lettuce, torn into bite-size pieces
To changed this up, use a variety of different herbs.
Directions
Dressing: Peel and divide the cloves of garlic. Tear the lettuce into bite size pieces. Mince the anchovies and 3 cloves of garlic. Combine in a small bowl with mayonnaise, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice and chopped herbs. Season to taste with salt and black pepper. Refrigerate until ready to use.
Salad: Place lettuce in a large bowl, and toss with dressing and remaining Parmesan cheese.
Ranch Dressing
Ingredients
1 cup of organic mayonnaise
1/2 cup organic Greek yogurt
1 teaspoon of fresh chives
1 teaspoon of fresh parsley
1 teaspoon of fresh dill
1 minced garlic
1 tablespoon finely diced onion
1/8 teaspoon of salt
1/8 teaspoon of ground black pepper
Directions
In a large bowl, whisk together the mayonnaise, yogurt, chives, parsley, dill, garlic powder, onion, salt and pepper. Cover and refrigerate for 30 minutes before serving.
Green Goddess Salad Dressing
Ingredients
2 cups of organic mayonnaise
4 anchovy fillets, minced
1 green onion, chopped
2 teaspoons of chopped fresh parsley
2 teaspoons of chopped fresh chives
1 tablespoon of apple cider vinegar
1 teaspoon of chopped fresh tarragon
Directions
Mince the anchovies. Chop the green onion, parsley, chives, and tarragon. Mix together mayonnaise, anchovy, green onion, parsley, chives, vinegar and tarragon. Refrigerate until ready to serve and pour over favorite salad or greens.
Blue Cheese Dressing
Ingredients
3/4 cup of organic Greek yogurt that has been strained (This thickens the yogurt.)
1 1/3 cups of organic mayonnaise
1 teaspoon of Worcestershire sauce
½ teaspoon of dry mustard
¼ cup chopped fresh parsley
2 tablespoons minced onion
1 minced garlic clove
½ teaspoon of salt
½ teaspoon of ground black pepper
4 ounces of blue cheese
Directions
Crumble the blue cheese. In a large bowl, whisk together the yogurt, mayonnaise, garlic, parsley, onion and Worcestershire sauce. Season with mustard, salt and pepper. Stir in blue cheese. Cover, and refrigerate for 24 hours before serving.
